Lentil stew
saute 3-5 min 1/4 cup of olive oil
one large  onion slice  chopped (big slices)
2 carrots chopped (big-slices)
add and saute  1/2teaspoon thyme
4  cups of water
salt to taste 
one cup of canned tomatoes.
cook in covered pot until lentils are tender about 45 min.
add 1/4 cup of sherry.
serve with your favorite grated cheese.

Gluten Free pancakes.

Oatmeal pancakes1/2 cup old-fashion oatmeal
1/4 cup low fat cottage cheese (or tofu)
4 egg whites
1 teaspoon vanilla extract 1/4 teaspoon nutmeg
1/2 tablespoon of brown sugar-(optional)
Place all ingredients in a blender until smooth.Cook as you would regular pancakes.
makes one serving
