Gulten free Fudge nut roll - only three ingredients.

Went to See Candy store and bought a  small piece(about 1/4 inch long) of fudge nut log for $1.50. That means  a whole log would be approximately $20.plus dollars. I made mine in a microwave oven for the cost of one can of condense milk, 3/4 cup of  nuts and and  1/8 cup of shredded coconut. The cost was approximate $3.50  Great gift for the holidays and it takes less than 20 min.
  1. Pour a can of condense milk in a deep microwaveable glass bowl.
  2.  Microwave for  2 min. let it sit until is totally cool about 5 -8 min. 
  3. Microwave again for 2 more min. let is sit until it cools. (make sure that it does not burn adjust your time from 1 to 2 min.)
  4. Microwave for  min again. let it cool and then  stir and place it on wax paper add about 1/2 to 3/4 cup of chopped nuts (your choice) roll it into a log add 1/8 cup of coconut (outside of the log.  The consistency will be  a bit soft.
  5. Let it sit on the counter until the next day. 
  6. slice and enjoy.

 Melons are now at our local supermarket, sweet and succulent for the hot summer months. I like to use wax paper instead of plastic wrap (plastic sticks to the melon spoils faster). The wax paper keeps the Mellon fresh and refrigerator order free. I tuck and wrap the wax paper around the melon. View picture

quick stir fry at -

Quick stir fry- Our family loves to go out to Chinese food restaurant. I make a stir fry for a fraction of the price it would cost to go out to a Chinese food restaurant. 
 Here is the recipe:
  • one pound of flank steak (or your choice of meat)
  • 3 tablespoon soy sauce or you can use oyster sauce( Iprefer oyster sauce)
  • 2 garlic clove, minced
  • one tablespoon of cornstarch
  • 1/4 cup of water
  • one beef bouillon cube, mashed
  •  sliced the following;green beans, cabbage, carrots, colorful sweet pepper, and one onion
  • 1.Slice the meat thin and in a bowl and add soy sauce or oyster sauce and garlic
  • 2. add beef and toss until well coated marinate for 35 min or more.
  • 3. In small cup combine cornstarch, water and bouillon.
  • 4. In a large skillet or wok (I prefer to use) heat oil until hot but not smoking.
  • 5. add beef and cook, until not pink.
  • 6.Take out the beef  and place it in a bowl.
  •  Add oil to pan to stir fry onions  and sliced veggies (do not over cook veggies) until tender and still crunchy .
  • 7. Add beef and  cook a few minutes longer
  • 8. Stir in cornstarch mixture and cook one more minute  
  • Server over hot rice-servers 4 people.

Hearty salad without lettuce


Hearty salad without lettuce. This salad is hearty  stays fresh longer than  a lettuce salad. The salad has carrots, cucumbers, celery, tomato, and  colorful sweet peppers. Happy eating!

Do you like jello? Here is an easy way to cut the calories in half with our adding artificial sweeteners.

I add unflavored jello to a regular jello package. Follow the directions on the box. For the unflavored jello you add one cup of hot water and one cup of cold water. You will not miss the extra sugar-it is still sweet. Instead of of 80 calories to 1/2  cup , it is 40 calories to a 1/2 cup. Happy eating!

Here is a tip to keep your onion fresh and stop the smell from leaking into other foods in the refrigerator.
Place the fresh cut onion  in wax paper and then into a sandwich bag. This will keep the onion fresh longer and seal the smell too.

Here is a wonderful treat to replace flour-Coconut  butter mochi. One of the Hawaiian favorites
Pan size 9 by 13
baking time one hour
temperature 350.
  • one box of Mochiko rice flour
  • 2 1/2 cups of sugar
  • 3 tsp baking flour
  • 2 cups of fresh milk
  • 4 ounces  butter melted 
  • 5 eggs
  • 1 tsp pure vanilla extract
  •  1 can of coconut milk
  • 1 cup of coconut flakes
  • combine all ingredients in a large bowl. Use blender. Pour into  9 by 13 pan that is well creased. Bake for  1 hour at 350
  • check if it is done with a toothpick. cool 10-15 enjoy
  • Keep this refrigerated and you can warm a piece at a time  in the microwave.

Spring is in the air.

Some pants  thrive better in the sun. I moved my orchid to a different part of my patio to see where the plant grew best. Before it use to bloom only once a year. Now that I move it couple of months ago- it has blossomed three times!
