Zucchini boats with ground up turkey and veggies.
1.Cut the zucchini in half
2. Scoop out the pulp with a teaspoon
3. arrange each scooped out zucchini on a oiled baking tray
5. prepare the stuffing in a frying pan with the following
ingredients: onions,garlic,sweet colored peppers,diced cooked red potatoes
add 1/2 table spoon of a secret ingredient black bean chili sauce (you can find it in the Asian stores).
6. Place all cooked ingredients inside the zucchini sprrikle some jack cheese on top and bake for approximate for  35 min.at 350

Gluten free Lasagna

Gluten free Lasagna
Is very easy to make . I used gluten free Lasagna noodles,fresh spinach from my garden,tofu,cottage cheese,mozzarella  cheese, organic meat and spaghetti sauce. Great tasting and my family enjoyed it.

Lentil stew
saute 3-5 min 1/4 cup of olive oil
one large  onion slice  chopped (big slices)
2 carrots chopped (big-slices)
add and saute  1/2teaspoon thyme
4  cups of water
salt to taste 
one cup of canned tomatoes.
cook in covered pot until lentils are tender about 45 min.
add 1/4 cup of sherry.
serve with your favorite grated cheese.

Gluten Free pancakes.

Oatmeal pancakes1/2 cup old-fashion oatmeal
1/4 cup low fat cottage cheese (or tofu)
4 egg whites
1 teaspoon vanilla extract 1/4 teaspoon nutmeg
1/2 tablespoon of brown sugar-(optional)
Place all ingredients in a blender until smooth.Cook as you would regular pancakes.
makes one serving

How to keep your lettuce fresh longer. I rinse it, dry it and wrap it in wax paper and put in the refrigerator.  

It is ready for use for salads or sandwiches.
