Zucchini boats with ground up turkey and veggies.
1.Cut the zucchini in half
2. Scoop out the pulp with a teaspoon
3. arrange each scooped out zucchini on a oiled baking tray
5. prepare the stuffing in a frying pan with the following
ingredients: onions,garlic,sweet colored peppers,diced cooked red potatoes
add 1/2 table spoon of a secret ingredient black bean chili sauce (you can find it in the Asian stores).
6. Place all cooked ingredients inside the zucchini sprrikle some jack cheese on top and bake for approximate for  35 min.at 350
